The Cheese Dairy Saignelégier was founded in 1995 and has become the largest of all Tête de Moine AOP production sites. With the new building our cheese specialists have been able to transfer and preserve the traditional values of Tête de Moine AOP making to a modern production site.

16 employees process roughly 13 million kg of milk each year supplied by 60 milk producers from Saignelégier, Les Pommerats, Montfaucon, Clos du Doubs and Champoz. From that milk -characterised by its herbal aroma- about 1'300'000 wheels of Tête de Moine AOP are produced each year. The cheese is stored and cared for in the cheese cellars until put onto the market by the cheese dealer Emmi Ltd. An average of 600,000 wheels of the unique Tête de Moine AOP mature in our cheese cellars in Saignelégier.
